
Orange Foam
This recipe is by Maurizio Palermo .
- 3 large oranges
- 5 oz Cointreau
- 3 1/3 oz fresh raw egg white
- 5 oz simple syrup
Ingredients
- Zest the oranges and then remove the white pith and discard it .
- Cut the oranges into chunks and
- together with the zest
- infuse in the Cointreau and simple syrup for 24 hours .
- Allow to strain naturally through a clean muslin cloth .
- Pour the strained liquid and the egg white into a clean gas canister charged with two nitrous oxide cartridges .
- Shake well and keep refrigerated until ready for use .
