Orange Foam

    Ingredients

  • 3 large oranges
  • 5 oz Cointreau
  • 3 1/3 oz fresh raw egg white
  • 5 oz simple syrup

    Preparation

  1. Zest the oranges and then remove the white pith and discard it .
  2. Cut the oranges into chunks and
  3. together with the zest
  4. infuse in the Cointreau and simple syrup for 24 hours .
  5. Allow to strain naturally through a clean muslin cloth .
  6. Pour the strained liquid and the egg white into a clean gas canister charged with two nitrous oxide cartridges .
  7. Shake well and keep refrigerated until ready for use .
