The wizard’s brew

A drink for witches and wizards with butterscotch, heavy cream, and cream soda.

    Ingredients

  • 8 oz. Brown sugar
  • light
  • 1 oz. Water
  • 3 oz. Butter
  • ½ tsp. Salt
  • ½ tsp. apple cider Vinegar
  • 6 oz. Heavy cream
  • ½ tsp. rum extract
  • 48 oz. Cream soda

    Preparation

  1. Place a pan over medium heat. Add water and sugar and bring to a gentle boil. Cook until a candy thermometer reads 240F.
  2. Add vinegar
  3. ¼ of the heavy cream
  4. butter and salt. Stir to combine. Remove from heat and let cool.
  5. Once cooled
  6. add the rum extract and stir. In a bowl add the sugar mixture and the rest of the heavy cream. Beat with an electric mixer for 3 minutes until thickened.
  7. Divide the sugar mixture into 4 glasses. Add 2 oz of cream soda. Stir and top each glass with whipped cream. Serve.
