Virgin Clover Club

A refreshing non-alcoholic cocktail that combines tart raspberry and lemon flavors, topped with a fizzy finish.

    Ingredients

  • 2 oz raspberry syrup
  • 1 oz fresh lemon juice
  • 1 oz egg white (or aquafaba for vegan option)
  • 5-6 fresh raspberries
  • Mint leaves for garnish
  • Club soda

    Preparation

  1. In a shaker, muddle the fresh raspberries with raspberry syrup.
  2. Add fresh lemon juice and egg white (or aquafaba).
  3. Dry shake (without ice) for about 15 seconds to froth the egg white.
  4. Add ice to the shaker and shake again until well chilled.
  5. Strain the mixture into a chilled glass.
  6. Top with club soda.
  7. Garnish with mint leaves and a raspberry.
